#Recipe Crockpot Cheesy Chicken Salsa

The weather is finally nice, at least here it is.  Dinner is the last thing we are thinking about. I personally love my crock pot. I love that I can add all the ingredients to it and walk away. Hours later dinner is done. However my crock pot cooks quickly. The settings it has are serve, low and high. I think of the settings more as low, high, turbo. On high I can cook frozen meat in 2-3 hours. It’s insane.

In the summertime I live in my RV. The RV doesn’t move, it stays in my campground 24/7. We do have all the comforts of home. There is no oven but we do have a stove top. I don’t really like cooking with propane because I’m use to cooking on an electric stove. This is where the crock pot really comes in handy. I can also save money using the crock pot. We pay a one time fee for electricity no matter how much you use. Each trailer has a propane tank we are responsible for. By not using the propane stove, I’m saving money.

One of my favorite crock pot meals is super simple. It’s called Cheesy Chicken Salsa.


 This recipe is super easy and only requires 3 ingredients. It can’t get much simpler than that. 


3lb Bag Boneless Chicken Breast

2 jars Salsa 

2 cans condensed cheddar cheese soup


1. Cut up chicken breast

2. Combine chicken, salsa and soup in crock pot

3. Cook until chicken is done (all crock pots vary)

You can use any salsa you prefer, you can even use homemade salsa if you would like. I personally like mild salsa and I’m not that picky on brand.

This recipe is easy to doctor up to make it your own as well. You can add different cheeses, or add rice to make the sauce thicken up some. I’ve done both. I’ve used Velveeta and I’ve also added rice.
