The weather here has turned chilly. I’m ready for some good comfort food. Tonight for dinner I made chicken pot pie. It was very easy and everyone in my family loved it.
1 pkg (6oz) chicken stove top
1 1/2 cup hot water
1/4 cup margarine
1 jar (12oz) chicken or turkey gravy*
2 cups chopped cooked chicken, cut into pieces
1 pkg (10oz) frozen mixed vegetables
Mix contents of vegetables/seasoning packet, hot water & butter in large bowl until butter is melted. Stir in stuffing crumbs just to moisten. Let stand 5 minutes. Pour gravy into 2 quart casserole. Stir in chicken, and vegetables. Spoon stuffing over chicken mixture. Bake at 350 for 45 minutes or until hot & bubbly.
I wanted a crust like a traditional pot pie. I used Pillsbury refrigerated pie crust. I added one to the bottom of the casserole dish and the other on top of the dish.
